CONFERENCIA PITA VIERNES 7/12/1012
PARA CREAR EMPLEO SOSTENIBLE EN ALMERÍA
CONFERENCIA

You are invited to the Conference on
THE POTENTIAL OF COMPREHENSIVE UTILIZATION OF PITA (AGAVE)
JOBS FOR A SUSTAINABLE ALMERÍA
DATE: Friday, December 7, 2012
The conference will discover the environmental benefits, economic and social projects that can be based upon the growing of pita (agave) in semiarid regions of the world.
The conference will be hosted by Tim Bernhardt (Timbe), Pita-founder of the River Water School environmental and artistic partnership, specializing in desert wood and full use of the pita since 1993. With a clear vision, and to raise awareness of the potential of pita as an exceptional resource for use in a sustainable way in Spain, Timbe will provide information and concrete examples of its potential to create jobs in Almeria.
One objective of this Conference is to seek partners to enable and encourage greater use of the pita, to make it a potential instrument of work for our province.
Welcome!

MORE INFORMATION:
Water is a limited resource and essential for the development of the towns where their scarcity and / or excessive degradation does not allow a normal supply. The advance of desertification, environmental and socio-economic problems and poor rainfall, makes plants adapted to climates such important elements to consider for the application of new eco technologies that allow better development of these peoples.
Mexico is the point of origin of the family Agavaceae (Pita). These plants are well adapted to conditions of scarcity of water and nutrients, in fact they are most efficiently produced biomass in water deficit conditions in the plant kingdom, even more than the cane sugar produced in tropical Brazil. Its use dates back to the time of the ancient Maya, when indigenous peoples used this wonderful plant as a source of raw material for hundreds of products, which have been transformed throughout history.
In our opinion, pita is one of the most promising crops in the world today, for its wide variety of products and also because it can be grown on "marginal" land where it does not compete with crops for food production. Moreover, the string has a wide variety of products of industrial interest with an increasingly attractive market.
Currently the Pita can be found in culture for local and industrial use in countries on four continents (except in Europe!), promoting economic development and significantly increasing the quality of life for millions of families.

Waterfalls on the terraces Friday 28th September 2012
There was a break in the clouds and the sun shone on a series of waterfalls across the terraces. The power of the water was extraordinary. It damaged terraces and destroyed tracks and spread landslides over the roads. In this location we had 220mm of rainfall in 8 hours. Last year we measured 250mm over the whole year.
This water flowed over an area which has been terraced for many years and where running water is not usually seen at all.
The revitalised rambla joined with many others en route to the sea and created a flash flood. A wall of water hit the houses built beside the Rio Antas. It became polluted by sewage and caused an enormous amount of damage and sadly some loss of life too.
Perhaps a tree planting programme would help to retain soil and water in the mountains and slow the progress of flood water, reducing the risk of flash flooding closer to the coast. Usually it is very hard to root new trees in the hard dry ground without irrigation but this year it may just be possible .......
Does anyone know of a source of young native trees?

ALMOND MILK - LECHE DE ALMENDRAS
How to make almond milk
Ingredients:
1 cup almonds (previously soaked for 8 to 12 hours)
1 litre of water (preferably pure) approx.
Preparation:
Put almonds in a blender and blend first with a little water so they are processed better, then add the remaining water...
Tip: Add water until you acquire the texture that you like. If you prefer you can sweeten it with raw sugar, stevia, or saborizarla with powdered carob or cocoa powder.
.....................................
Milk or almond drink improves the tissues by greatly reducing skin diseases, helps the nervous system, protects the walls of the intestine and regulates the absorption of sugar and cholesterol.
With good values of calcium and phosphorus, almond milk is an ideal food for children and adolescents, where both of these nutrients play a vital role in the formation and remodeling of the bone and also for pregnant women or during lactation, as it could partly meet mineral requirements, and for elderly people, where a diet rich in calcium is an important measure of prevention against the development of osteoporosis.
Almonds contain phosphorus, potassium, magnesium, calcium, iron, sulphur, chlorine, aluminium, manganese, copper, zinc, and vitamins A, E, B 1, B 2 and PP.

Contienen fósforo, potasio, magnesio, calcio, hierro, azufre, cloro, aluminio, manganeso, cobre, cinc, vitaminas A, E, B 1, B 2 y PP.

Almond and sweet potato bites
Almond and sweet potato bites
First crack your almonds! There is no need to blanch them. About 4 handfuls will be enough. The amounts in this recipe are all approximate and can be infinitely varied according to what's in the cupboard and what you think might be tasty.
For the vegan version you will need something like:
INGREDIENTS
2-3 tbs olive oil
1 stick of celery, very finely chopped
1 onion, very finely chopped
1 carrot, finely grated
1 sweet potato, peeled and diced
4 handfuls of almonds, ground in the liquidiser
2 wholemeal pitta breads or an equivalent amount of your favourite leftover bread, crumbed in the liquidiser
1 level tsp of vegetable bouillon powder.
A handful of sesame seeds (unpolished ones are tastiest) in a bowl
METHOD
Gently fry the celery and onions in the olive oil for about 10 minutes.
Simmer the sweet potato for about 10 minutes then drain and mash
Add the carrot to the celery and onion mix and fry gently for a little longer.then leave to cool a little
Put the ground almonds and breadcrumbs in a mixing bowl.
Sprinkle with the bouillon powder and mix it in.
Add the fried veg and mix again.
Add the mashed sweet potato and mix until all the ingredients are incorporated.
Set the oven to 180C
Roll the mix into balls in the hand and then roll the balls in the sesame seeds in the bowl. Makes about 20.
Place in tiny cake cases or on a baking tray (they shouldn't stick as the sesame seeds are on the outside).
Bake at 180C for about 20 minutes.
Eat hot or cold with salad.
If you have no sweet potato you can make a similar tasty bite using a little hot water to moisten the mix and a beaten egg to bind it.Then you can dissolve stock in the hot water. So if you don't have a tub of bouillon powder you can use half a stock cube or a spoonful of marmite.
Next time I make them I'll add a photo, if I remember before they all disappear!
Buen approvecho!

Apricot and Almond Pudding Cake
Apricot and Almond Pudding Cake
The brief but wonderful season for apricots is upon us and this recipe is sufficiently delicious to make the time to sit down and crack a few of those almonds languishing in the back of the store cupboard. If you have made this cake before you may even find you have offers of help to crack some almonds with you ....So, firstly, crack those almonds!
You will need a 20cm cake tin, the base lined with baking parchment.
The oven needs to be preheated to 170C.
INGREDIENTS
150g unsalted butter
125g caster sugar
2 medium eggs
75g self-raising flour
75g ground almonds
250g fresh apricots
25g unsalted butter
1 heaped tbsp granulated sugar
METHOD
Wash and quarter the apricots, taking out the stones. They are best if they are not too ripe.
Melt the 25g of butter in a frying pan on a low heat.
Add the granulated sugar and stir .
Add the apricots and cook gently for 5 minutes.
Leave to cool.
Beat the butter with the caster sugar until light and fluffy.
Add the eggs slowly with a little of the flour to avoid curdling.
Add the remaining flour and the ground almonds and fold them in gently with a metal spoon.
Scrape the mixture into the prepared tin and smooth the surface.
Arrange the apricots on top and sprinkle the remaining juices from the pan over the top.
Bake for 45-50 minutes or until a skewer inserted in the centre comes out clean.
Allow to cool if you can restrain the people who helped you to crack the almonds for long enough. Otherwise, enjoy it hot with cream, custard or yoghurt!
With thanks to Hugh Fearnley-Whittingstall, River Cottage Everyday, whose original recipe for Apple and Almond Pudding Cake was the inspiration for this recipe.

profesores/as y alumnos/as y dotarnos de herramientas y un criterio
